THAI CHICKEN-FREE SATAY

We believe that plants can do anything meat can do … better, yea thats right! Better! Take this chicken-free satay, for example, which uses Beyond Meat brand Chicken-Free Strips that can be brined and grilled to recreate this Thai classic, without the meat. We’re huge fans of it and think you will be too!
Anything that’s thrown on the grill can tend to dry out quickly. What we’ve done to prevent that here is to give these chicken-free strips a long and relaxing bath in a sweet and salty brine (with a little sriracha thrown in for a kick of heat) before throwing them onto a hot grill. Once that’s done, we then slather them down with a sweet and creamy peanut sauce and finish with fresh cilantro before serving. If you are looking to spice it up, make this easy Wicked Healthy dish!

- Yield: 4-6 people 1x
for the brine
- 1/3 C rice vinegar
- 1/3 C low-sodium tamari
- 1/4 C agave
- 1 C water
- 2 T Sriracha, or Ninja Squirel Sriracha
for the satay sauce
- 1/4 C peanut butter
- 2 lemons, juiced
- 1 T sriracha
- 2 T maple syrup
- 1 T ginger, chopped
- 1/2 C water or coconut water to blend
- cilantro leaves, for garnish
- sesame seeds, for garnish
- red chile, thinly sliced, for garnish
- Soak skewers in water (this will prevent them from burning on the grill).
- In mixing bowl, whisk the vinegar, tamari, agave, water and sriracha.
- Place the Beyond Meat Strips in the bowl and toss well, coating all pieces.
- Allow to brine for at least an hour. This will allow the product to absorb more moisture, resulting in a juicier grilled skewer.
- Once brined, skewer each strips and set aside.
- In blender, blend all the satay sauce ingredients until smooth. Pour into small sauce pan.
- Place satay sauce on low heat and until just warmed through, then remove from the heat.
- Using a gas grill or grill pan, place all skewers of brined strips and allow to grill on each side until nicely marked, about 3-4 minutes on both sides.
- Using a small spoon or pastry brush, brush a generous amount of satay sauce on each grilled skewer.
- Garnish with sprigs of cilantro, sesame seeds and thinly sliced red chile.
- Serve and enjoy!
