Oh hey there sun! I might not be able to put my finger on it to explain correctly but can tell you one thing I’ve noticed lately. It’s this little feeling in my gut, a seed of excitement that happens every year around this time. SPRING! It grows along with all the new veggies coming to market. And these following five role models of ours are killing me with anticipation to get back in the kitchen and cook some more!

First up is this gorgeous, vibrantly green Cucumber Melon Jalepeño Smoothie from Kelly over at Appleseed Cuisine. We love the extra kick of heat that the jalepeño provides here, as well as the tips that Kelly provides on making the perfectly hued green smoothie. Be sure to check out her Cilantro Lime Ginger and Parsley Fennel Pear Smoothies as well! Not sure why but all I can think about is the green monster wall at Fenway when I look at this!

We love the simplicity and heartiness of this six-ingredient Simple Black Bean Soup by Susan over at FatFree Vegan Kitchen. Susan made this soup in an Instant Pot, served with tortilla chips crisped in an air fryer, and we’re loving the fresh pop of color that the fresh tomatoes, jalepeños and avocado provides here.

This Tandoori Cauliflower Roast from Ashley over at Blissful Basil is an absolute showstopper! We are all about moving vegetables to the center of your plate, and Ashley does all of this and more by dousing an entire head of cauliflower in a Tandoori-spiced coconut yogurt sauce, giving it a roast, then serving with a garlicky-cilantro cashew dressing. There’s nothing fishy about this beet-based poke bowl from Sarah over at My New Roots. Those are roasted and marinated Chioggia beets in there, which Sarah used for their deep pink and white color, which combine together during the roast time to produce a realistic-looking plant-based “tuna” … we love this idea!

Last up is this mouthwatering Carrot Cake from Sarah over at My Darling Vegan. Can you believe this is also gluten-free? This cake is packed with fresh carrots, coconut and walnuts, and finished with a silky cream cheese frosting. This is a wicked perfect way to end any meal!
