First up is this wicked awesome Lemon Cranberry & Pistachio Cashew Cheese Ball by Margaret over at The Plant Philosophy. We love that this can be whipped up in 10 minutes, that the base uses only four ingredients and can be encrusted with whatever dried fruit or nuts you’d like. We’d love this on a crostini or alongside our own version of cashew cheese!
These croissants by Constanze over at Seitan is My Motor are perfection and her tutorial on how to make them is in depth and inspiring … just look at all of those layers! Croissant-making looks like a perfect form of breaditation (with no disrespect to Mabel, our current sourdough obsession).
This Carrot Soup with Carrot Top Pesto by Jeanine over at Love & Lemons uses the entire carrot—tops and all—to create this bright and wicked delicious soup. We love the addition of ginger that always pairs so well with carrots!
This Salty Maple Squash with Ginger Scallion Rice and Turmeric Brussels Slaw by Laura over at The First Mess screams fall. Raw Brussels sprouts make an amazing slaw, and look perfect tossed between the squash and pomegranate seeds.
For dessert, we love this Vegan Pumpkin Cashew Pudding from Gena over at The Full Helping. Cashews, pumpkin puree and spices are combined to make this quintessential fall dessert, and comes complete with coconut whipped cream!
