There are so many, and that means so many opportunities. Don’t be fooled by what the generic grocer has with their mere three offerings at best. Explore new options, when you find them at your local farmers markets inquire, learn and arm yourself with all the different kinds. These meaty textured, complex flavored little beasts can save our lives in more way than one and dang nabbit, they’re dawg on DELICIOUS! Screw meat … mushrooms are the answer!
First up are these Mushroom-based, French Dip Sandwiches from Alissa over at Connisseurus Veg. They have sauteed portobellos, a spicy horseradish mustard and an killer au jus. What more could you ask for in a sandwich?

We love the simplicity of these Seared King Oyster Mushrooms + a Homemade Teriyaki Glaze from Erin over at Olives for Dinner. These are perfect served with any green and steamed rice or noodles!
